Hey guys! What’s up with y’all? For me these past few weeks have been Crazy with a capital C. As I mentioned a few posts ago, my family and I recently moved from Lawrence, Kansas, to Texas, which was a huge transition for just everyone involved.
Although there was a lot of negative that came from moving to Texas, there was also a TON of positives, including the AMAZING FOOD. I absolutely LOVE spicy food, and Texas is the Spicy Food Kingdom, so I’ve been living the life down here. But don’t feel left out, I’m about to share with you one of my favorite family recipes: Easy, Hot, and Cheesy Jalapeno Poppers. Let’s get to it!

Makes: 20 Prep Time: 0 Min Total Time: 40 Min
What you Need:
2 Blocks Cream Cheese
2 Cups Mexican Cheese
1 Pound (Or 20 slices) of Bacon (My favorite part)
- First off you’re just going to cream together the cream and Mexican cheeses, until the cream cheese is pretty smooth.
- Next is the hardest part and that is where you prep the Jalapenos. To prep the Jalapenos you want to cut off the top, and then try to remove most of the seeds, while keeping the Jalapeno “cup” in tact. The more seeds that you leave in the Jalapeno the spicier it will be, so depending on you’re spicy “resistance” level you might want to be more careful.
- Now it’s time to assemble. First you are going to need to take about a tablespoon of cheese, and put it inside the Jalapeno. Next, you are going to want to wrap the jalapeno in bacon, and set it on a plate.
- Now for the final step, you are going to want to grill the Jalapeno poppers starting with about 5 minutes on each side, or until the bacon is cooked. Set them aside to cool for about 5 minutes and then enjoy!
