Easy, Yummy, and Healthy Granola

Hey beautiful amazing reader! Today is Monday, and if you have been following this blog for any amount of time you know I hate Mondays. And if you have not been following this blog for very long, then first of all welcome, and second of all now you know. What you might NOT know is that the only thing I hate more than Mondays are mornings. And the worse time to be around me is Monday mornings. Seriously just don’t even try to be nice to me. I won’t be doing the same to you. However, after I get some food in my body, I am the happiest girl alive, especially if that food is some DELICIOUS Granola. Yum yum yum! Here’s my Easy recipe!

2 Cups Old Fashioned Oats

1/4 Cup Currants or Raisins

1/4 Cup Shredded Coconut

1/4 Cup Honey

2 Tbsp. Coconut Oil

2 Tbsp. Chia Seeds

2 Tbsp. Flax Seeds

2 Tbsp. Wheat Germ

  1. Mix together the old fashioned oats, currants/raisins, chia seeds, wheat germ, and flax seeds in a medium bowl. Set aside.
  2. Cover a small cookie sheet with tin foil and spread out the coconut in a light layer. Set in the oven at 400F until lightly toasted. Add to the oats mixture. 
  3. Next add the honey and coconut oil , mixing in with your hands or a spoon until combined well throughout.
  4. Spread out on the cookie sheet from before and set in the oven. Bake for about 15 minutes or until slightly toasted. Remove from oven, and break into small chunks. Store in an airtight container. Serve with milk or yogurt.
