Hey guys! Happy Wednesday! I’m about to admit to you something so deep, so intimate, I might lose all of my followers. Are you ready? Here it is: I am not a morning person. Yep you heard me right. I can be so grumpy in the morning…you should probably just avoid me. Or proceed with caution. Either one works for me.
Are you confused already? It’s okay I even confuse myself. My point is this: Sometimes I need a little extra dose of joy in the morning. Preferably in the shape of pancakes that took about 15 minutes to whip up, with chocolate chips and peanut butter…yeah you heard me right. So…if you are like me and struggle with being extra peppy in the morning, I bestow upon you…my Banana pancakes recipe!
1 TBSP Peanut butter
Butter (to line skillet)
handful of chocolate chips (optional)
- First, mash the banana until it is smooth, then whisk in the eggs until it all resembles one smooth color. Next add a tablespoon of peanut butter and mix in until spread throughout the batter. Add the chocolate chips. Set aside.
- Preheat a small skillet, thinly coating it with melted butter. Next, pour in about 1/4 cup of batter in the middle of the pan. Wait for approximately 5 minutes, until the batter is bubbling on top, then flip the pancake. Cook for an additional 5 minutes.
- Finally, remove the pancake from the pan. Repeat with the remaining batter. Serve with syrup and a glass of milk. Enjoy!
