Okay, so in case you didn’t notice, Valentine’s and Galentine’s day is coming up fast. (If you don’t know what Galentine’s day is click HERE to read my last post.

But if you are like me, you didn’t notice and now you’re scrambling to do something special for the one(s) you care about. I am actually having a mini heart attack right now….because I don’t know what I’m going to do…because I already made this awesome recipe! So for those of you panicking just like me, don’t worry because I’ve got you covered. Anyone who tastes this will instantly fall in love with it…and you! And, bonus points, probably the best chocolate mousse I’ve ever had, and it’s super easy and only has 4 ingredients…plus water. Enough babbling…I should probably tell you how to make it!

2 Cups Chocolate Chips
2 Tbsp. Sugar
1/4 Cup water
2 Cups Heavy Cream
1 Tsp. Cinnamon
Optional:
Strawberries
- In a medium saucepan over medium heat, stir the water and the sugar until the sugar is completely dissolved.
- Next, pour in the chocolate chips and the cinnamon, stirring constantly until completely melted. Then set aside.
- In a mixer, whip together the heavy cream until stiff peaks begin to form. Slowly pour in the chocolate, stirring until completely mixed through. It’s okay if it seems drippy, it will firm up after it’s refrigerated.
- Pour the mousse into a large container and refrigerate for 1-2 hours. Top with strawberries and enjoy!

Update: it’s in the fridge right now. It went well at first; but then I discovered we had no cinnamon left. I poured in the dusty particles left, and carried on. And as I took out our (heavy) cream, I thought of something: did we need it for something else? Turns out, yes: potato soup on Friday. So I ditched the cream. There were 2 cups needed, and I knew that the other cream we had wouldn’t be enough, so I substituted milk. And realized I’d have to skip the first half of Step 3. Oops. So I have no doubt that my version will NOT turn out well. 😂 But in my defense, I never bake. And this was spontaneous. Maybe I’ll add frozen strawberries? I’d better get them out to defrost, then… 😛 (Or maybe bananas! Or both!) (Maybe this won’t turn out so bad after all… 😜)

Thanks Julia…It may or may not come out drippy though ;-)…Maybe stick it in the freezer for 1 hour and make it a chocolate ice cream? Actually I might try that next time I make it!

I left it in the fridge for around an hour and a half. It didn’t turn out too bad! The top was kind of like jello, but when I got through it, it was liquidy, so we could just drink it.
The strawberries seemed to balance out the chocolate sweetness with their own, and although I didn’t try it, bananas would’ve also gone great. 😉
Honestly, the only thing I would change would be the chocolate chip amount. Maybe to a cup and a half, and see how much it changes the taste? (One thing I liked about a mess up was that not all of them were melted, and it gave it a really awesome texture! 😂) I might try out making it again sometime! Thanks so much for sharing this recipe!

Oh wow, this look sooooo good! I’m assuming a pint of regular whipped cream would be okay (?) That’s what I have in the fridge so I could try to give this a go tomorrow as I needed a little cooking project 🙂

Yeah that should be fine! If you’re using Cool-Whip it might not come out the same, but as long as it’s a dairy based whipped cream you should be fine!
